Oriental Grilled Chicken recipe
Ingredients:
¼ cup of rice vinegar.
2 tablespoons of black bean paste.
¼ cup of garlic, minced.
2 tablespoons of fresh ginger root, minced.
½ cup of scallions, minced.
1 tablespoon of soy sauce.
1 tablespoon of white wine.
1 tablespoon of dry mustard.
1 tablespoon of liquid hot pepper sauce.
1 teaspoon of peanut oil.
1 lb of boneless skinless chicken breast.
Cilantro leaves, optional, to garnish.
Directions:
Combine all of the ingredients except the cilantro leaves; mix thoroughly.
Cover and chill overnight.
Remove chicken from marinade, drain thoroughly.
Grill for 5 minutes per side or until cooked. Alternatively, bake @ 375°F (190°C) for 30 minutes or until juices run clear when pierced with a fork.
Remove to a serving platter.
Heat the marinade until boiling and reduce a little. Simmer 3 minutes. Serve over the grilled chicken.
Garnish with cilantro leaves, if desired.
